Rested on fine lees

Furthermore, production on the lees is a complicated, expensive practice that involves temporarily immobilizing production. It is a rewarding effort and results in an Albariño wine with unique character and highly recognized in both national and international markets.

As fine lees

The fine lees are small microorganisms used in the aging of our ARAVO albariño
To love this, the fine lees have an aroma that can leave the ovens of yesteryear. The lees are formed by yeasts like bread and different bacteria that after their decomposition (autolysis) provide the appreciated mannoproteins that will be part of the character. only one of our ARAVO albariño wines.

Protectors like mothers

Fine lees, cooked like nai do viño, are natural protectors that allow the use of sulfites to be significantly reduced.

and preserve the color and aromas of the grape.

Our ARAVO Albariño

It is aged on fine lees for three months in French oak barrels and subsequently , nine more months in stainless steel tanks.

Battonage, in French oak

Bâttonage or batoning is an ancient technique used to ensure that the fine lees remain on the surface of the wine. We carry it out directly inside our French oak barrels by introducing a "baton" to stir the wine and get the lees to return to the surface .

Constant love

We carry out this process daily during the first period of ageing, then gradually spacing out the battonage until we reach a weekly stirring, always within the barrels themselves.

The comeback

In the last months the process ends in stainless steel tanks with the pumping over technique, by which the wine is stirred from the bottom of the tank to the top to raise the lees and release mannoproteins and   different polysaccharides .

TASTING

Balanced Albariño

Appearance: A lemony yellow color with elegant greenish and golden flashes, clean and bright.

On the nose: Very ripe grapes, apple, apricot, white flowers and mineral notes, integrating
a harmonious and complex aromatic ensemble.


In the mouth: Fresh and full, with body and balance, well integrated acidity and softness is perceived.

Long, persistent and balanced finish.
